- 1/4 cup unsweetened almond milk – you can use any
- 1 banana
- 1/2 cup frozen mixed berries
- Top with honey, granola (Mamma Chia granola clusters) and fruit

Amazing Grass Protein Superfood – Chocolate Peanut Butter Shake
Last week I tried the protein mixed with unsweetened almond milk so I decided to get creative and make a shake after my gym sesh.
- Amazing Grass Chocolate Peanut Butter Protein
- 1 Banana
- 1 tbsp Natural Peanut Butter
- 1 cup Unsweetened Almond Milk
- Ice cubes
It was DELICIOUS – I want to drink this every day. Amazing Grass is the first plant-based protein that I’ve tried (I usually opt for Whey). It still amazes me that you can get 20 grams of protein from pea, quinoa, chia and hemp.

Yay! Breaking into my second pair of my Brooks Glycerin 13.
To be honest, it wasn’t love at first run.. I went through three pairs of the Glycerin 12 and LOVED that model. I wasn’t thrilled when I slipped my foot into my first pair of the 13’s and realized that the entire feel was different. It was heavier and cushier (which was apparently exactly what I needed). Regardless I trained and ran my first marathon with the Glycerin 13 and I love it! I’m now onto my second pair along with a new pair of the Glycerin 14.

I love that this product is organic and provides all of the nutrition that I would want in a protein shake! The mix consists of 20g of plant-based protein, 7 alkalizing greens, and 2 full servings of nutrient-dense fruits and veggies. The Chocolate Peanut Butter flavor is AMAZING and can be mixed with water, milk or into your favorite smoothie!
I went for the simple mix with unsweetened almond milk following my run today and I’m hooked! I can’t wait to try out mixing it into a smoothie so keep an eye out for more reviews to come!

So far this has been my go-to breakfast this week on the days that I don’t lift and get my protein smoothie…
Not sure what exactly to call this either – Strawberry PB Banana Chia Seed Smoothie w/ a Matcha booster ?
- Fresh/frozen strawberries – I ended up using about 5 medium sized fresh strawberries and liked it better than using the frozen strawberries pictured above.
- 1 banana
- 1 tsp organic peanut butter
- 1 tsp chia seeds
- 1 tsp matcha powder
- 1 cup almond milk
- Some ice
I’ve been experimenting with the measurements based on taste this week but all of these ingredients blended together make for a pretty awesome breakfast smoothie regardless.
This week’s meal prep: shrimp, broccoli, sweet potato and onions.
I was feeling pretty lazy so this was pretty quick and easy. Feel free to let me know if you have any questions!!
- Shrimp – sautéed with olive oil, garlic and pepper.
- Broccoli – steamed with a pinch of Parmesan cheese.
- Sweet potato – cubed and baked in the oven with olive oil, salt and pepper.
- Onions – sautéed with olive oil.
Dropped into the Fleet Feet 4 miler in Chapel Hill this weekend in hopes of not making my plantar fasciitis worse.
I did the 10 miler last year and struggled with a 9:47/mile pace. The course is difficult to say the least but pretty as it runs through UNC. This year I wasn’t exactly in better shape due to my injury but the 4 miler felt good! The course was awesome with a few hills and I came in with an official pace of 8:04/mile (missing 3rd place in my age group by 6 seconds!).
What an awesome way to start the weekend. 🙂
Just tried out a new recipe since I was craving some sweets: Peanut Butter Chia Seed cookies.
These are super easy and only require 5 ingredients (there is only 4 in the picture because I added maple syrup at the last minute).
- 1 tbsp – Natural Unsweetened Cocoa Powder
- 1 tbsp – Organic Chia Seeds
- 1 cup – Organic Peanut Butter
- 2 tsp – Maple syrup
- 1 – Egg
- Preheat oven to 350 degrees
- Mix all of the ingredients
- Roll into balls (spoonful) and flatten with fork
- Bake for about 10 minutes
